Pinkish black olives originally grown in the Pontina plain. Excellent for preparing ﬁrst courses and second courses based on meat or ﬁsh. The product is pitted, dark in color with violet reﬂections. The aroma reveals the characteristic scent of olives.
Intense ﬂavor, thick and consistent, goes towards a pleasant slightly bitter taste, which gives it the typicality and uniqueness of a rare product, limited to a small production area. Store in a refrigerator at 6-12°C.
